As the way to someone’s heart is through his stomach, we at Alter Schlachthof use as many products as possible from local farmers and selected suppliers from the immediate vicinity. Because only with fresh, natural and high-quality ingredients, we are able to create dishes that taste really delicious and are good for you. This applies to South Tyrolean classics as well as excursions into international cuisine, vegetarian and vegan variations as well as delicacies that guests with intolerances can also enjoy.
We select every product and every supplier very carefully. This enables us to offer you freshly harvested fruit and vegetables and meat of the highest quality. Dry aged meat from the grill makes the hearts of meat lovers beat faster. In addition, we have a young, hip kitchen team that shares our passion for valuable, local food, harmonises culinary tradition and trends and puts its heart and soul into its cooking. And thanks to the glazed kitchen, you can look over their shoulders at all times.
Here you can enjoy really good coffee and healthy juices from the farmer. In addition to selected South Tyrolean wines, liqueurs and creative cocktails, there's one thing you shouldn't miss:
our own craft beer Viertel Bier, which is produced in our brewery in Schabs.
What are you up for? How much time do you have? Have an espresso at the bar, sit down in one of the cosy armchairs with a newspaper, tea and cake or find a spot in the garden for your lunch break. Start the day with a healthy breakfast from the buffet, treat yourself to something good in between or toast to the end of the day with an aperitif in good company. Simply make yourself comfortable wherever you like and order whatever you fancy. You can find out what's on the menu, which is constantly changing depending on the season and what's available on the market. You will also find changing dishes of the day, which our chefs sometimes conjure up spontaneously from whatever the farmers are harvesting.
